Where do Backups go?

When I back a set of bookmarks or notes it backs up very fast. Too fast to be sent to Mantis on the Internet. So where do they get backed up for restoration? On my device? Because I would not want multiple copies on my device.
I have an iTouch 2nd Gen.

They do get backed up over the Internet to our server. It usually only takes a few seconds to do this, depending on how many bookmarks and notes you have, and depending on the speed of your net connection.
