Could additional color options be added for customization of the reader background color? Particularly, a very light gray and a couple of off-whites would be nice.

You can do this yourself with a custom color set. Just create the color set, and by default the background color will be white. You'd only need to change that one setting to whatever you like (you can even use HTML hex colors, like #FFFFFF).
