I'd like to be able to double tap a word to start a highlight span.  Possibly having the highlight bar appear at that point so I could pick the color.  You could then end the highlight as you do now by clicking on the last work in the highlight.  I'd also like to see the highlights rendered as a continuous region rather than word by word.  I find the breaks in the color distracting and they reduce the readability of the text.

Our next version (now being tested) will display highlighting as a continuous span.

From the notes the latest version appears to support the single block of highlight color however I've just installed and tested this and my highlights are still broken up between words. I checked and I'm running 3.0.1. I tried removing my highlight, clearing all highlights, and then going back in and rehighlighting and it still shows them broken up.

They are broken up while you are in highlighting mode.  When you turn off the highlighter, they display in the reader screen as a single block of color.  This makes it easier to see what color each word is before you submit your changes.

Hmmm. Well I for one leave highlight mode on nearly all the time which is why I suppose it appeared to not change for me. In your current UI then, you imagine a reader having their Bible on their lap and a highlighter pen next to them with the cap on. They pick up the pen and remove the cap, highlight a passage, replace the cap and put the pen down. From a feature perspective you are saying people tend to highlight a passage in multiple colors.

My arguement is I'd prefer to have my highlighter pen in hand the entire time I'm reading and that I'm less likely to highlight the same passage in multiple colors so the UI and feature doesn't fit my study style particularly well. :-)

This would give me quicker access to highlighting and I wouldn’t have to have the color palet always open (freeing up some screen space.)

I think I would rather see the double tap (or touch and hold) reserved for another feature, perhaps to automatically initiate a search on the touched word or strong number. With highlighting turned off, selecting a phrase as if highlighting could initiate a search on the phrase.
